- 500g pack chicken breast fillets or skinless
- 2 tbsp coconut milk
- 1 tsp olive, coconut oil
- salt & pepper
- 3 tbsp ketoi mala seasoning
- soak 12 bamboo skewers in water.
- cut cleaned chicken into bite sized pieces and season with salt & pepper and coconut milk, then place in the refrigerator for 1hrs or over night
- mixed ketoi mala seasoning with oil of your choice
- heat the grill to high, thread marinated chicken onto the soaked skewers and place on a baking tray. spread ketoi mala seasoning mixed with oil on the meat. grill for 5 mins on each side until golden brown and cooked through. serve immediately with fresh salad or cauliflower rice and enjoy!
